When thinking of a healthy meal, one’s mind often gravitates to the idea of some sort of salad combination. They are quick, require little to no prep time and incorporate whatever leftover ingredients are present within your fridge. Although not always ideal, salads are everyone’s go to idea of a healthy meal that can be prepared in under ten minutes.
If you’re looking to spice up your dinner options, the following are some great alternatives to what you once considered, a boring, healthy meal!
Lemon Chicken – Prep Time (10 Mins)
- 1 tsp cornflour
- 1 tsp dark soy sauce
- Finely grated zest & juice 1/2 small lemon
- 2 tsp coconut or canola oil
- 1 skinless chicken breast fillet (around 150g), cut into 1.5cm slices
- 1 capsicum, any colour, deseeded and sliced
- 1 medium carrot (around 80g), trimmed and thinly sliced
- 100g broccoli, cut into small florets
- 150ml chicken stock (made with 1/2 Massel Plant Based Chicken Stock cube)
- 4 spring onions, trimmed and thickly sliced
Chicken Roast – Prep Time (15 Mins)
- 6 thyme sprigs, leaves picked
- 4 anchovies in oil, drained, chopped
- 2 teaspoons dried oregano
- 1 teaspoon chilli flakes
- 2 tablespoons olive oil
- 2 garlic cloves, chopped
- Finely grated zest of 1 lemon
- 8 chicken thighs (bone in, skin on)
- 800g baby kipfler potatoes, halved lengthways
- 100g speck or streaky bacon, cut into 5mm-thick batons
- 250g baby truss tomatoes
Zucchini Stir Fry – Prep Time (15 Mins)
- 2 Skinless Chicken Breasts
- 4 Zucchini
- 2 Whole White Onion
- 5 tbsp Soy Sauce.
- 1 tbsp Apple Cider Vinegar
- 1 clove of Ginger + 2 cloves of Garlic.
- 2 tbsp Cornstarch + Water
- Red Pepper Flakes
